
Making a Finnish Pancake is my short-cut to getting breakfast on the table when we have guests without having to stand over the stove making each pancake. One batch serves four adults, and did I mention it’s dead easy? So this is my own version of the classic recipe adding a few extras for a more fancy brunch. If you don’t have maple sugar just use any sugar you have. You could also use cinnamon and apples if you aren’t a pear cardamom person.
You will need:
1¼ cups all-purpose flour
¼ cup maple sugar
1 teaspoon salt
1 teaspoon ground cardamom
2 cups milk
3 eggs
¼ cup butter
3-4 ripe pears, sliced
12″ cast iron skillet (or something about that size that is oven safe)
Medium bowl
Wooden Spoon
Spatula
Electric mixer
Directions
Preheat oven to 375 degrees F and place a 12″ cast iron skillet into the oven
In a medium bowl stir together flour, maple sugar, cardamom, and salt.
In a separate bowl or large measuring cup, mix eggs and milk together and then slowly add the wet ingredients to the dry ingredients while beating with an electric mixer until blended. Batter will be very thin.
Add the butter to the frying pan in the pre-heated oven and allow it to melt. Turn the pan to be sure all of the sides are coated and then stir the remaining butter into the batter.
Lay the slices of pear in the bottom of the frying pan
Pour batter into the hot pan and bake in the oven for 30 minutes.
It will puff up when baking, and flatten when cool.
Cut into slices and serve with whatever you wish
